D Magazine reached out to three local brewers and longtime Meddlesome Moth employees to talk about the beer bar’s 15-year run

[My wife] Lindsay and I spent many a date night, an anniversary celebration, and more with the Moth. It was one of our go-to places even before we opened On Rotation, and it has always remained an inspiration. There’s certainly elements of the Moth that we’ve borrowed for the way we do beer dinners and the types of beer experiences we try to create now for our brewpub. The way they elevated beer and showcased it alongside food helped change Dallas’ perception of craft beer, from something to be enjoyed in an industrial, warehouse setting on Saturdays to something you could bring to the dinner table.I want to say it was their 2010 New Year’s Eve beer/wine dinner that cemented my love of New Belgium La Folie. It’s one of my favorite beers still to this day, but it’ll never taste as good as it did that night. The Moth paired it with Kobe petite tenderloin with sweet potato gnocchi and pomegranate gastrique. The interaction between the dish and the beer was one of those quintessential beer experiences that lives in your memories forever. The host told us during that course to get a bite of the Kobe in our mouth, take a sip of La Folie, and let the two interact. It was one of those epiphany beer moments for me.
