You’ve never had an IPA quite like this before.

This “mash hop IPA” features tropical and hoppy aromas and flavors driven primarily by the yeast.

Fermented with a yeast designed to activate massive amounts of thiols during the fermentation process, this beer received a mash hop addition of Cascade hops to load the beer with precursors for thiolization.

No hops were added once we pitched the yeast, and the yeast transformed this beer during fermentation into a hazy IPA rich with nectarine, peach, and mango notes.

The aroma is sharply citrus with a nectarine peel freshness and a hint of floral. The body is weighty and soft with peach and mango sweetness. There is almost zero bitterness, but you’ll notice a touch of tropical citrus to the finish that’s refreshingly clean.

While doing QC on this beer after fermentation, it just felt complete as is without a dry hop. So we packaged it right away. We think the thiols abundantly bursting from this beer will surprise you, and it’s hard to believe that there were no hops added after fermentation. So the Mash Hop IPA came to be!
