We love a good sasion, especially one that we can ferment to complete dryness. In this case, to showcase two delightful French hops, we chose a French saison as the vehicle.

Fermented to complete dryness, this French Saison dry hopped with French hops Mistral and Barbe Rouge pours with a frothy effervescence. Mistral imparts a light melon and citrus and a hint of wine-like grape and juicy pear. Barbe Rouge brings out a crisp berry aroma with wafts of sweet strawberry, tart raspberry, and tangy lime. Surrounding the hop flavors are the light esters of a bone-dry French saison, leaving room to showcase the late addition hop flavors and aromas.

This beer gets its name from the primary fighter craft of the French, Dassault Rafale. It means “Gust of Wind” or “Burst of Fire” in French.
